Vinification – Separation of free-run and press juices, followed by ageing in stainless steel tanks.
Appearance – Pale golden yellow.
Nose – Pure and precise, with a distinctive character, showing notes of apricot and ripe lemon.
Palate – Intense yet beautifully refined, combining freshness with great expression. Long, mouthwatering, savoury and saline on the finish.
Ageing potential – 5 to 20 years.
Food pairing – Green prawn curry with lemongrass and Thai basil. Amberjack sashimi with yuzu ponzu, toasted sesame oil and fresh ginger.
